The man behind the exquisite dishes is German born chef Heinz Beck. He may be German but his understanding of Roman and Mediterranean makes him arguably the most Italian chef in the country.
When one dines at La Pergola, it is essential that you experience the restaurant's signature dish; 'The Sea'. When serving Beck's signature dish, a waiter pours a 'wave' of seafood broth over a freeze-dried “rock” of scampi claws and potato, which then dissolves into the “seabed” of barnacles, white shrimp and Venus clams.
